Eustathios 16 was monk, priest and hegoumenos of the monastery of Maximinos; in 787 he attended the Second Council of Nikaia (the Seventh Ecumenical Council) and is attested at the second and fourth sessions, on 26 September and 1 October 787: Mansi XII 1111 (Εὐστάθιος ὁ εὐλαβέστατος ἡγούμενος τῶν Μαξιμίνου), XIII 152 (Εὐστάθιος ἡγούμενος τῶν Μαξιμίνου). At the second session he supported the traditional veneration of icons as described in statements from pope Hadrian I (Hadrianos 1): Mansi XII 1111. At the fourth session he produced a codex containing the Leimonarion of Sophronios (presumably the version of John Moschus' Leimonarion continued and completed by Sophronios) from which a passage was read out: Mansi XIII 60 (Εὐστάθιος ὁ εὐλαβέστατος μοναχὸς πρεσβύτερος καὶ ἡγούμενος μονῆς τῶν Μαξιμίνου), cf. 192 (unnamed ἡγούμενος τῶν Μαξιμίνου; another passage, which had been erased from a copy at Constantinople, was read from it at the fifth session). Later at the fourth session Eustathios 16 subscribed the statements read out from the Fathers in support of the veneration of icons: Mansi XIII 152.
